No mystery, but I learned to love SOS in the Air Force, as they made it with sausage. When I was a kid growing it up my mom made it with what she called "chipped beef," but which was actually that very thin-sliced sandwich meat. She served it one toast instead of biscuits, as the original was served. I liked it fine, but the original as made by the military (and good breakfast restaurants, especially down south) was even better. I never ate in an Air Force chow hall that didn't serve "biscuits and gravy," aka SOS. | ||||||

For reference, the above message is a reply to a message where: I ran into that corn bread and baked beans breakfast the first time when I was going through Basic Airman School at the Naval Air Station in Jacksonville, Florida.
